Holiday Recipe for a Prime Rib Roast on a Grill Rotisserie

10 minute read | Recipe

The holiday season is a time of joy, family, and delicious meals. One of the most impressive dishes you can serve during this time is a perfectly cooked prime rib roast on a rotisserie grill. Whether you're hosting a small gathering or a big dinner party, this recipe will help you create a mouthwatering meal that everyone will love.

Ingredients You'll Need

To start, you’ll need a prime rib roast. The size of the roast should be based on how many people you’re serving. A good rule of thumb is to get about 3/4 to 1 pound per person. Along with the roast, gather the following ingredients:

  • Prime Rib Roast - roughly 3/4 - 1 lbs per person
  • 1/4 cup of kosher salt
  • 2 tablespoons of garlic powder
  • 2 tablespoons of coarsely cracked pepper
  • Olive oil

These simple ingredients will give your roast a rich, flavorful crust while keeping the meat tender and juicy inside.

How to Prepare the Roast

Begin by mixing the spices in a bowl. Make sure they are well combined so that the seasoning is evenly distributed across the roast. Next, take the roast out of the refrigerator and let it sit at room temperature for about 30 minutes. This helps the meat cook more evenly. Once it's ready, brush the roast with olive oil. This not only adds flavor but also helps the seasoning stick better. Then, rub the spice mixture all over the roast, making sure every part is covered.

Setting Up the Grill

Before placing the roast on the grill, make sure your PGS Grill is preheated to 250°F. If your grill has a rotisserie attachment, place the roast on it and close the lid. Cooking on a rotisserie ensures even heat distribution and results in a beautifully roasted piece of meat.

Cooking the Prime Rib

It typically takes around four hours to cook the prime rib on a rotisserie grill. However, it’s important to check the internal temperature periodically. The ideal internal temperature is between 130°F (for rare) and 140°F (for medium-rare), depending on your guests' preferences. Use a meat thermometer to ensure accuracy.

Resting and Slicing the Roast

Once the roast reaches the desired temperature, remove it from the grill and let it rest for about 15 minutes. This allows the juices to settle back into the meat, ensuring a moist and tender result. After resting, slice the roast into half-inch thick pieces and serve immediately.

Pair It With Great Sides

A prime rib roast is best served with complementary sides. A classic choice is horseradish sauce, made by mixing mayonnaise, Dijon mustard, sour cream, and grated horseradish. Grilled vegetables like asparagus or broccoli also pair well with the roast. These can be cooked on a side grill while the prime rib is roasting.

Create a Memorable Holiday Experience

While the food is important, the overall experience matters just as much. Set the mood with warm lighting, festive decorations, and comfortable seating. Whether you're hosting outdoors or indoors, creating a cozy atmosphere will make your guests feel welcomed and appreciated. Don’t forget to play some holiday music and offer a variety of drinks to enhance the celebration.
