**Is Making Grilled Rack of Lamb Really This Simple?**

Grilled rack of lamb is often seen as a dish reserved for high-end restaurants or professional chefs. But the truth is, with the right techniques and a little bit of patience, you can prepare this luxurious cut on your PGS Grill at home.
The key to success lies in proper preparation. When you buy a rack of lamb, it usually comes with some fat and silver skin that need to be removed. These parts can cause flare-ups and affect the flavor if not handled correctly. Start by using a boning knife to carefully slice between the loin and the fat cap. Then, gently remove the fat from the top of the bones.
Next, take off the silver skin above the loin. This thin layer can become tough and unappetizing when cooked, so it’s best to remove it with small, careful strokes. Once that’s done, you’re ready to French the rack.
Frenching is a technique that gives the rack a more refined look. Using your boning knife, trim away the meat and fat between the ribs, leaving the bones clean. You don’t need to remove too much—just enough to create a neat, appealing appearance.
Now, it's time to set up your PGS Grill for indirect cooking. Place the rack of lamb on the cooler side of the grill, away from direct heat. This method ensures even cooking without overcooking the meat.
Before grilling, sear the rack on both sides over high heat to lock in juices and add a nice crust. After searing, move it to the indirect heat area and continue cooking until it reaches your desired doneness. Use a meat thermometer to check the internal temperature—120°F for rare, 125°F for medium-rare, and 130°F for medium.
For seasoning, keep it simple. A mix of sea salt, black pepper, rosemary, and sage, combined with melted butter, adds great flavor without overpowering the lamb. Don’t forget to let the meat rest before serving—it will be more tender and juicy.
